Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides the fermentable sugar that yeast converts into alcohol.
Fermenting ale
Supplies live yeast to start the fermentation.
Raisins
Add fruit sugars and flavour to the fermenting liquid.
Brandy
Raises the alcohol content and adds aroma.
Brown sugar candy
Adds extra sweetness and caramel-like depth.
Isinglass
Helps fining, clearing the liquid as it settles.

The step that matters

Skimming the boil. Foam carries impurities and wild microbes; removing it before cooling leaves a cleaner liquid for the fermentation that follows.
