Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Mashed potatoes form the body of the starter and add starch that feeds the yeast.
Yeast
Yeast ferments the sugars in the mixture, producing gas that leavens the bread.
Sugar
Sugar provides food for the yeast and adds sweetness to the finished bread.
Hops
Hops add bitter and aromatic flavour to the liquid used in the starter.

The step that matters

Add the yeast only when the mixture is cool. Yeast is killed by high heat, so adding it to a hot mixture can stop fermentation before it starts. Letting the mixture cool first keeps the yeast alive to work.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, ginger):

  1. Mustardfits better
  2. Capsicumfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
