What each ingredient does

Potatoes
Their starch and moisture keep the bread soft and moist.
Sugar
Feeds the yeast and adds sweetness and browning.
Flour
Gluten forms the structure that holds the batter together and traps gas.
Yeast foam
Yeast ferments the sugars, producing gas that makes the bread rise.

The step that matters

Mixing the potato water and sugar until lukewarm. The mixture must be only lukewarm before the yeast goes in. Hot liquid can kill yeast cells, so the dough will not rise properly. Lukewarm warmth lets the yeast become active without being damaged.

Swap the potato

How well each one fits the dish's main ingredients (sugar, flour):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
