Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the yeast starter

  1. Soak 2 yeast cakes in 2 cups warm water, then stir in 5 tablespoons flour; let cool and stand overnight.

Make the dough

  1. In the morning, combine 2 cups of the yeast mixture, ½ cup sugar, 2 cups warm water, and 1 round teaspoon salt.

  2. Mix in equal parts of wheat flour and whole wheat flour until the dough is firm.

  3. Let the dough rise, then shape it into 5 loaves.

Bake

  1. Let the loaves rise again and bake at 350°F (175°C) until golden.

What each ingredient does

Yeast
Produces gas as it ferments, making the dough rise and become light.
Wheat flour and whole wheat flour
Form the gluten structure that traps gas and holds the loaf's shape.
Sugar
Feeds the yeast and adds sweetness and browning to the crust.

Swap the potato

How well each one fits the dish's main ingredients (sugar, ginger, wheat, flour):

  1. Sweet potatofits better
