What each ingredient does

Sour milk
Its acidity causes the milk to clabber, forming the curd that becomes the cottage cheese.
Sweet cream
Adds richness and moisture, making the drained curd soft enough to spoon.

The step that matters

Draining the curd until quite dry. Excess whey left in the curd makes the cheese watery and loose. Draining thoroughly gives a firm texture, and the cream added afterward can then be controlled for consistency.
