Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat the oven to 350°F (175°C).
In a bowl, combine the chopped beef, beaten egg, cracker or bread crumbs, salt, pepper, and optional sage or onion.
Mold the mixture into a loaf shape.

Place the loaf in a dripping pan and add a little water.
Top the loaf with several pieces of butter.
Bake for about 2 hours, basting often.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Raw chopped beef
- Forms the body of the loaf and provides the main savory flavor and structure when cooked.
- Egg
- Binds the mixture so the loaf holds its shape when sliced.
- Cracker or bread crumbs
- Absorbs juices and moisture, keeping the loaf tender rather than dense.
The step that matters
Basting often during the long bake. Regular basting keeps the surface moist over about 2 hours in the oven, reducing dryness and helping the top brown evenly as the butter and pan liquid are spooned over the loaf.
Swap the sage
The recipe marks sage as optional. How well each one fits the dish's main ingredients (beef, egg, bread, pepper, butter):
- Parsleyfits better
- Nutmegfits better
- Tarragonfits about as well
- Sagethe original
Fit is the average pairing score against beef, egg, bread, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
