Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the meat

  1. Chop the veal and pork finely, removing all skin and shreds.

  2. Add soaked bread, pepper, salt, and the beaten egg to the meat. Mix thoroughly and shape into a loaf.

Coat and roast

  1. Roll the loaf in toasted bread crumbs.

  2. Roast in a 400°F (200°C) oven for two hours, basting frequently with plenty of butter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it a meaty structure when cooked.
Lean pork
Adds fat and moisture so the loaf stays tender rather than dry.
Soaked bread
Absorbs liquid and helps keep the meat mixture moist and lightly bound.
Beaten egg
Binds the chopped meat so the loaf holds its shape when sliced.
Toasted bread crumbs
Form a crisp, browned crust on the outside of the loaf during roasting.

The step that matters

Mixing the meat, bread, and egg thoroughly. Even distribution binds the chopped meat so the loaf holds together when sliced. Uneven mixing can leave crumbly pockets or dense spots that cook unevenly.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
