Scalloped Chicken

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Divide the chicken into joints and boil until the meat easily separates from the bones.

  2. Thicken the boiling water with flour and season with butter and salt.

  3. In a deep dish, layer toasted bread crumbs, shredded chicken, and slices of hot boiled potatoes.

  4. Top with more bread crumbs and moisten well with gravy.

  5. Bake at 300°F (150°C) for 45 minutes.
