Ingredients

Directions

The book says “a very slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 300°F (150°C).

  2. In a bowl, beat the egg yolks and add the powdered sugar, flour, and baking powder.

  3. Fold in the chopped dates and walnuts.

  4. Add the vanilla extract.

  5. In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the mixture.

Bake and serve

  1. Pour the batter into a buttered baking tin.

  2. Bake for 30 to 45 minutes until set.

  3. Serve with whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the pudding its light, airy lift, while yolks add richness and binding.
Dates
Add moisture and natural sweetness to the batter.
Walnuts
Add crunch and a toasty, nutty flavor that contrasts with the soft crumb.
Flour
Provides a small amount of structure so the batter sets during baking.
Baking powder
Releases gas in the batter to help it rise and become tender.

The step that matters

Folding in the egg whites. Whipped whites trap air that gives the pudding its lift. Stirring them in vigorously deflates the foam, so the batter turns dense. Fold gently, with a spatula, until no white streaks remain.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, dates, egg, flour, vanilla):

  1. Almondfits better
  2. Chestnutfits better
  3. Brazil nutfits about as well
  4. Walnutthe original

Fit is the average pairing score against sugar, dates, egg, flour, vanilla. Candidates are from the same food group and used in at least 100 recipes.
