Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the bulk of the torte, giving a dense, moist, nutty crumb without flour.
Eggs
Whipped whites add lift and structure, while yolks contribute richness and moisture.
Baking powder
Releases gas in the batter, helping the torte rise and become lighter.
Powdered sugar
Sweetens the batter and adds tenderness as it dissolves into the mixture.

The step that matters

Folding in the beaten egg whites. Stiff whites hold the air that lifts the batter. Overmixing or deflating them during folding makes the torte dense and heavy, so fold gently until just combined.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well
