What each ingredient does

Sweet cream and egg yolks
Form a custard that sets during baking and moistens the layered fruit.
Sour apples
Provide the tart fruit base that balances the sugar and cream.
Sugar
Sweetens the filling and helps the fruit and nuts taste richer.
Zwieback
Soaks up juices and adds a light crumb texture between the layers.
Raisins and currants
Add chewy pockets of sweetness throughout the filling.

The step that matters

Bake at 350°F until set. The cream and egg yolk mixture needs enough heat to set into a custard, but overbaking can make it curdle or turn dry and rubbery. Watch for a center that is just firm, then let it cool so the custard finishes setting.

Swap the currant

How well each one fits the dish's main ingredients (apple, sugar, raisin, almond, cream, egg):

  1. Vanillafits better
  2. Figfits better
  3. Apricotfits better
  4. Currantthe original

Fit is the average pairing score against apple, sugar, raisin, almond, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
