Cream Candy

Ingredients

Directions

Make the candy

  1. Boil the sugar, water, and vinegar together until it becomes brittle in cold water, then remove from heat.

  2. Let cool.

  3. Pull the mixture.

Make the cream and shape

  1. Boil 4 cups of sugar and 1 cup of water without stirring until it begins to thread, then remove from the stove.

  2. Let it stand until it thickens.

  3. Stir until it turns white and is too stiff to handle with a spoon.

  4. Add vanilla while stirring.

  5. Knead like dough until cool.

  6. Cover with a damp napkin to prevent crusting while molding.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the candy's sweet structure as it cooks, cools, and crystallizes into a soft texture.
Vinegar
Acid that partly breaks sugar into smaller sugars, helping the candy stay smooth rather than grainy.
Vanilla extract
Adds aroma and flavor to the finished cream.

The step that matters

Boil the sugar without stirring. Stirring hot sugar syrup encourages large sugar crystals to form, which makes the candy grainy. Keeping it still until it threads, then stirring only after it cools and thickens, helps produce a smooth, creamy texture.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Pineapplefits about as well
  4. Apricotfits about as well

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
