What each ingredient does

Sweetbreads
Provide the main meaty texture, becoming tender and browned in the pan.
Butter
Adds fat for browning the onion and sweetbreads and carries flavour.
Onion
Softens and browns, adding sweetness and savoury depth to the dish.
Mushrooms
Release moisture and brown, adding earthy flavour and body.
Sherry
Adds acidity and aroma, and helps lift browned flavour from the pan.

The step that matters

Adjusting the moisture while simmering. Covering the pan holds steam, so the mixture can turn wet; uncovering lets excess liquid evaporate. Checking and adjusting during the 15 minutes keeps the texture right.
