Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Egg whites
Collect impurities as they heat, helping the stock turn clear.
Lemon juice
Adds acidity that brightens the flavour of the jelly.

The step that matters

Straining the mixture through a cloth. Straining removes solids and any egg white residue, so the finished jelly stays clear rather than cloudy.

Swap the onion

How well each one fits the dish's main ingredients (clove, carrot, celery, lemon, egg):

  1. Parsnipfits better
  2. Leekfits better
  3. Turnipfits better
  4. Onionthe original

Fit is the average pairing score against clove, carrot, celery, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
