Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. Beat the butter and sugar with the egg yolks until very light.

  3. Add the cream, milk, and grated pineapple to the mixture.

Fold and bake

  1. In a separate bowl, beat the egg whites until stiff peaks form.

  2. Fold the beaten egg whites into the pineapple mixture.

  3. Pour the mixture into a pie crust and bake until set.

Serve

  1. Optionally, reserve 2 egg whites for meringue or use all 4 for the pie and serve with whipped cream.

What each ingredient does

Eggs
Yolks enrich and help set the filling, while whipped whites trap air for lift.
Pineapple
Provides moisture and tart, fruity flavor.
Sugar
Sweetens the filling and softens its texture.
Butter
Adds fat for richness and a tender texture.
Cream
Adds fat and richness, making the filling smoother.
Milk
Adds moisture and richness to the filling.

The step that matters

Fold in the beaten egg whites gently. Whipped whites hold air that gives the pie lift. Stirring them in vigorously knocks out that air, leaving a denser, flatter filling.
