Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable structure once chilled.
Cream
Adds richness and a light, airy texture when folded in.
Sugar
Sweetens the pineapple and balances its acidity.
Grated pineapple
Provides the main fruit flavour and liquid for the cream.

The step that matters

Letting the gelatine mixture cool before folding in the cream. If the gelatine is still hot, it can melt the whipped cream and cause it to deflate. Cooling it until just thickened keeps the cream airy and lets the gelatine set evenly.
