The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and milk barely smell alike, yet cooks put them together in 77,875 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and, when boiled, the syrup that sets the loaf.
Egg whites
Whipped to a stiff foam that gives the loaf its light, airy structure.
Karo syrup
Keeps the boiled sugar smooth and helps prevent crystallising.
Milk
Adds moisture and softness to the boiled syrup base.

The step that matters

Beat the hot syrup into the egg whites. Pouring the syrup in slowly while beating keeps the whites from scrambling and lets them hold a stable foam. Adding it all at once can deflate the foam and leave the loaf dense.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, syrup, milk, egg):

  1. Almondfits better
  2. Chestnutfits better
  3. Pecansfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, syrup, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
