Make the rarebit

  1. Melt the butter in a chafing dish.

  2. Add the diced cheese, dry mustard, and cayenne pepper.

What each ingredient does

Fresh cheese
Melts into a smooth, rich sauce that forms the body of the rarebit.
Beer
Thins the melted cheese into a pourable sauce and adds a slightly bitter, malty flavour.
Butter
Melts first to coat the pan and add richness to the cheese mixture.
Dry mustard
Adds a sharp, pungent note that balances the richness of the cheese.

The step that matters

Adding the beer gradually while stirring. Cheese proteins and fat can seize, turn grainy, or scorch when heated too fast or unevenly. Adding beer slowly while stirring keeps the mixture loose and evenly heated, so it becomes smooth rather than burnt or stringy.

Swap the mustard
