Galantine of Turkey

Ingredients

Directions

  1. Chop the pork, bacon, veal, parsley, thyme, green onions, and bay leaves very finely.

  2. Mix the chopped ingredients with salt and pepper until well combined.

  3. Prepare the turkey by removing the neck, wings, and legs at the joints.

  4. Carefully cut the skin on the back of the turkey and remove the flesh from the bones without cutting the skin.

  5. Spread the turkey skin out and layer the meat mixture about ¾ inch thick on it.

  6. Add the bacon, ham, veal, and tongue fillets on top, along with sliced truffles if using.

  7. Top with more of the meat mixture to fill the turkey, then sew it up to retain its shape.

  8. Wrap the turkey tightly in a towel and secure it with string.

  9. Place the wrapped turkey in a stewpan with the broken bones.

  10. Add the diced bacon, calf's feet, carrot, onions, and cloves for seasoning.
