Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream together the butter and sugar until light and fluffy.

  2. Add the beaten eggs and mix well.

  3. Stir in the cream, brandy, and grated nutmeg.

  4. In a separate bowl, combine the flour and baking powder, then gradually add to the wet mixture.

  5. Fold in the chopped citron, almonds, and raisins.

Bake and finish

  1. Pour the batter into a greased loaf pan and bake at 350°F (175°C) until a toothpick comes out clean.

  2. Frost if desired.

What each ingredient does

Butter
Creams with sugar to trap air, giving the cake a light, tender crumb and rich flavor.
Sugar
Creams with butter for aeration and adds sweetness and gentle browning.
Eggs
Bind the batter and add structure and richness as they set in the oven.
Flour
Forms the main structure of the cake as its proteins set during baking.
Baking powder
Releases gas in the batter, helping the loaf rise and become lighter.
Almonds
Add texture and nutty flavor while staying crisp against the soft crumb.

The step that matters

Adding the flour and baking powder gradually. Adding flour gradually and mixing only until combined keeps the batter smooth and limits gluten development, which would otherwise make the loaf tough and dense.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, sugar, egg, cream, brandy, flour, almond):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Capersfits less well
  4. Tarragonfits less well

Fit is the average pairing score against butter, sugar, egg, cream, brandy, flour, almond. Candidates are from the same food group and used in at least 100 recipes.
