What each ingredient does

Eggs
Set the custard, giving it structure as it bakes.
Milk
Forms the liquid base of the custard, adding moisture and softness.
Crackers
Crushed crackers thicken the mixture and give the pudding body.
Raisins
Add pockets of sweetness and chewy texture throughout the pudding.
Baking soda
Reacts with the mixture to help it rise and lighten slightly.

The step that matters

Adding the raisins after 20 minutes. Adding raisins at the start would let them sink and burn on the surface. Adding them once the custard has partly set keeps them suspended and evenly distributed.

Swap the raisin

How well each one fits the dish's main ingredients (milk, egg, butter, sugar):

  1. Vanillafits better

  3. Coconutfits about as well
  4. Raisinthe original
