What each ingredient does

Strawberries
Provide the juice that forms the body and flavor of the jelly.
Granulated sugar
Sweetens the jelly and helps it set by binding water and aiding gel formation.

The step that matters

Boiling the juice before adding the sugar. Boiling first concentrates the juice by evaporating water, so the sugar and natural pectin can form a firm gel when the jelly cools. Too little boiling can leave the jelly runny.
