Roast Beef

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the beef

  1. Preheat the oven to 350°F (175°C).

  2. Wash the beef and rub coarse sea salt into it.

  3. Dredge the beef with flour.

  4. Place the beef in a roasting pan with 1 pint of water.

Roast and baste

  1. Roast for 2 hours, basting every 15 minutes.

  2. Remove the beef from the pan using a skimmer or spoon.

Make the gravy

  1. To make the gravy, pour off the fat from the drippings.

  2. Add a little hot water and browned flour to the drippings, stirring constantly until it boils.

  3. Stir in 1 tablespoon of soy sauce or tomato ketchup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the meat that becomes tender and flavorful during long, gentle roasting.
Flour
Coats the surface and, once browned, thickens the drippings into gravy.
Soy sauce or tomato ketchup
Adds savory depth and color to the gravy.

The step that matters

Stirring the gravy until it boils. Flour thickens liquid only when heated and stirred, so constant stirring prevents lumps and lets the starch swell evenly into a smooth gravy.
