Why it works: Onion and carrot are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 21,601 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Calf's Foot Broth

Ingredients

Directions

Make the broth

  1. Boil the calf's feet in 2 quarts of water with the onion, carrot, salt, and mace.

  2. Let it boil for 2 to 3 hours, reducing the liquid to 1 quart. If the water evaporates too much, add more water.

  3. Once done, strain the broth and remove the fat.

Finish and serve

  1. Add 1 cup of good wine before serving.

What each ingredient does

Calf's feet
Release gelatin into the water, giving the broth body and a silky, setting texture.
Water
Acts as the cooking liquid that extracts flavor and gelatin from the calf's feet.
Wine
Adds acidity and aromatic depth to the finished broth.

The step that matters

Reducing the liquid by simmering. Long, gentle boiling concentrates the broth and extracts gelatin from the bones and connective tissue. Letting it boil too hard or running dry can make it cloudy, bitter or over-reduced, so topping up water as it evaporates keeps the flavor balanced.

Swap the mace

How well each one fits the dish's main ingredients (onion, carrot, wine):

  1. Thymefits better
  2. Garlicfits better
  3. Celeryfits better
  4. Macethe original

Fit is the average pairing score against onion, carrot, wine. Candidates are from the same food group and used in at least 100 recipes.
