Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. In a pot, layer pieces of salt pork at the bottom.

  2. Add the cut-up chicken, salt, pepper, and more pieces of salt pork.

  3. Cover with cold water and boil for two hours or until the chicken is tender.

  4. If using, add sliced potatoes and cook until tender.

  5. Cover the pot with a pie crust, making a few slits in the top.

  6. Bake at 400°F (200°C) for 15 to 20 minutes, or steam if preferred.
