Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

Assemble

  1. Line the scallop-shells or patty-pans with mashed potatoes.

  2. In a bowl, mix the minced cold meat with bread crumbs, minced boiled onion, and coarse sea salt, then moisten the mixture with a little cold gravy.

  3. Layer the meat mixture over the mashed potatoes in the shells.

  4. Top with another layer of mashed potatoes, smoothing and pressing the edges.

  5. Place a thin piece of butter in the center of each shell.

Bake

  1. Bake in the hot oven until browned.

What each ingredient does

Mashed potatoes
Form the base and top layers, giving a soft, moist filling that browns on the surface.
Cold meat
Provides the main savory filling, bound and moistened by the gravy.
Bread crumbs
Absorb moisture and help bind the minced meat into a cohesive filling.
Butter
Adds fat that enriches the surface and promotes browning in the oven.
