What each ingredient does

Green tomatoes
Provide the main body and bulk of the pickle, softening while they absorb the spiced vinegar.
Vinegar
Provides the acidity that preserves the pickle and gives it its sharp flavor.
Sugar
Balances the sharpness of the vinegar and spices with sweetness.
Onions
Add savory depth and aromatic sweetness as they soften in the brine.
Cayenne pepper
Adds heat that builds as the pickle sits.

The step that matters

Heating without boiling. Holding the mixture at scalding rather than a rolling boil heats the tomatoes through and softens them while keeping them intact. Boiling would break them down more and can make the texture mushy and the vinegar taste harsher.

Swap the tomato

How well each one fits the dish's main ingredients (clove, mustard, allspice, pepper, sugar, ginger, onion):

  1. Horseradishfits better
  2. Shallotfits better
  3. Carrotfits better
  4. Tomatothe original

Fit is the average pairing score against clove, mustard, allspice, pepper, sugar, ginger, onion. Candidates are from the same food group and used in at least 100 recipes.
