Raspberry and Currant Wine

Ingredients

Directions

Prepare the fruit

  1. Mash and squeeze the currants, breaking any that remain whole.

  2. Pour 1 quart of water over the currants and let it stand overnight.

  3. Strain the mixture through a coarse sieve to remove seeds.

Make the wine

  1. Measure the liquid and add 1 pound of sugar for each quart.

  2. For every 4 quarts of currants, add 1 quart of mashed raspberries mixed with 1 pint of water.

  3. Bottle the wine and let it age for at least a year for the best flavor.
