Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into the partly frozen mixture to add a light, frothy texture.
Sugar
Sweetens the punch and balances the sharp acidity of the lemon juice.
Lemons
Supply the acidity and aromatic oils from the rind that define the punch's flavor.
Rum
Adds alcoholic body and flavor; it also keeps the mixture from freezing solid.

The step that matters

Beating in the egg whites when partly frozen. Egg whites whip to a stable foam only when cold and not fully frozen; beating too early or too late gives a thin or icy result rather than a light froth.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (rum, lemon, sugar, egg):

  1. Vanillafits better
  2. Orangethe original
  3. Pineapplefits about as well
  4. Limefits less well

Fit is the average pairing score against rum, lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
