What each ingredient does

Pig's head
Provides the meat and gelatine-rich connective tissue that binds the chopped mixture as it sets.
Sage
Adds a herbal, aromatic flavour that balances the richness of the pork.
Black pepper
Adds mild heat and aroma to the seasoned meat.

The step that matters

Simmering the chopped meat gently. Simmering gently with added boiling liquid keeps the meat moist and lets the gelatine from the bones loosen, so the mixture binds and sets firmly when cooled. Boiling hard would toughen the meat and make it dry.

Swap the sage

How well each one fits the dish's main ingredients (pepper, meat):

  1. Thymefits better
  2. Parsleyfits better
  3. Rosemaryfits about as well
  4. Sagethe original

Fit is the average pairing score against pepper, meat. Candidates are from the same food group and used in at least 100 recipes.
