What each ingredient does

Flounders
Provide the fish that breaks down into the body of the stew.
Parsley
Adds a fresh, herbal aroma to the cooking liquid.
Peppercorns
Add a mild, warm spice to the cooking liquid.
Bread and butter
Served alongside to soak up the stew and add richness.

The step that matters

Pulping the fish through a sieve. Pressing the cooked fish through a sieve separates the flesh from the bones and skin. Pushing too hard or leaving bones behind affects the smooth texture of the finished stew.

Swap the parsley

How well each one fits the dish's main ingredients (bread, butter):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Capersfits about as well
