Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the dough
Peel, boil, and mash the potatoes.
Pour 1 quart of boiling water over the mashed potatoes and strain through a sieve.
Let the mixture cool to blood-warm, then stir in the yeast, sugar, and salt.
Add the flour gradually, beating well with a spoon, and set in a warm place to rise.
After rising (4 hours in summer, 5 in winter), knead the dough with some flour and lard for 20 minutes.
Shape and bake
Place the dough back in the pan and let it rise for 1 hour.
Form the dough into loaves and let them rise for 40 minutes.
Bake at 350°F (175°C) for 45 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Potatoes
- Add starch and moisture, giving the bread a soft, tender crumb.
- Yeast
- Produces gas as it ferments, making the dough rise and become light.
- Flour
- Forms the gluten structure that traps gas and gives the loaves their shape.
- Lard
- Adds fat that tenderizes the crumb and softens the texture.
- Sugar
- Feeds the yeast and promotes browning in the crust.
The step that matters
Letting the dough cool to blood-warm before adding the yeast. Yeast is killed by high heat, so water or potato mixture that is too hot can stop the rise before it starts. Blood-warm is gentle enough for the yeast to stay alive and active.
Swap the potato
How well each one fits the dish's main ingredients (sugar, flour):
- Arrowrootfits better
- Beetrootfits better
- Sweet potatofits better
- Potatothe original
Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
