Turkey with Truffles

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Truss the turkey as for boiling.

  2. Mix light forcemeat with pounded truffles and stuff it into the cavity near the breast. Secure the stuffing to prevent it from falling out.

  3. Place slices of lemon, a pinch of coarse sea salt, and slices of bacon on the breast.

  4. Bind white paper over the turkey with packthread.

Roast and serve

  1. Roast gently at 350°F (175°C) for one and a half hours.

  2. Before serving, remove the paper, glaze the breast, and serve with truffle sauce around the turkey.

What each ingredient does

Turkey
Forms the main body of the dish, carrying the stuffing and cooking as one whole bird.
Light forcemeat
Adds a soft, moist stuffing that fills the cavity and keeps the inside tender.
Truffles
Contribute a strong earthy aroma that flavours the stuffing and the dish.
Bacon
Lays fat over the breast, adding moisture and savoury flavour as it cooks.

The step that matters

Roast gently at 350°F (175°C) for one and a half hours.. Gentle, moderate heat cooks the large bird through without drying the breast, while the wrapping of paper and bacon helps hold in moisture. Keeping the heat low and steady matters more than speed.
