What each ingredient does

Beef
Forms the main body of the dish, becoming tender during long, slow cooking.
Vinegar
Acidity helps tenderize the meat during the overnight marinade.
Port wine
Adds sweetness and depth to the marinade and the cooking liquid.
Onions
Release sweetness and moisture as they soften in the cooking liquid.

The step that matters

Cover the pan tightly and bake until tender. A tight cover traps steam so the meat braises in its liquid rather than drying out. Slow, gentle heat over a long time breaks down connective tissue, so the beef needs to stay covered and cook until a fork slides in easily.

Swap the mace

How well each one fits the dish's main ingredients (beef, parsley, thyme, shallot, nutmeg, basil, allspice):

  1. Marjoramfits better
  2. Winter savoryfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against beef, parsley, thyme, shallot, nutmeg, basil, allspice. Candidates are from the same food group and used in at least 100 recipes.
