Sweetbreads with Veal and Ham

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Blanch heart sweetbreads for eight minutes, then wash and dry them.

  2. Remove a piece from the under part and pound it with a small quantity of light forcemeat.

  3. Fill the cavity in the sweetbread with the forcemeat.

  4. Rub the top with white of egg and lay a thin slice of ham, a slice of veal, and a bard of bacon over it.

  5. Cover the whole with paper and a thin sheet of common paste.

  6. Bake gently at 300°F (150°C) for one hour.

  7. Just before serving, remove the paste and paper, glaze the bacon lightly, and serve with a good bechamel sauce underneath.
