Pork Cutlets

Ingredients

Directions

  1. Cut the back of pork into chops and trim them.

  2. Season the chops with pepper and coarse sea salt.

  3. Broil the chops gently until they are cooked and light brown.

  4. For another method, coat the chops in fresh batter mixed with chopped shallots, pepper, salt, and lemon juice.

  5. When nearly done, coat the chops in breadcrumbs and broil until light brown.

  6. Serve with a sauce made from culís, mushrooms, ketchup, lemon pickle, and mustard, reduced to a glaze.
