What each ingredient does

Egg yolks
Bind the stuffing and enrich it so it holds together when cooked.
Beef marrow
Adds richness and moisture to the stuffing.
Cream
Keeps the stuffing soft and moist during cooking.
Bread crumbs
Absorb liquid and give the stuffing body.
Veal caul
Wraps the tongue, holding in moisture and the stuffing as it cooks.

The step that matters

Pound the stuffing well. Thorough pounding blends the marrow, yolks, cream and crumbs into an even paste. Lumps or uneven mixing can make the filling crumble or cook unevenly inside the tongue.
