Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's feet
Their gelatin-rich connective tissue sets the brawn as it cools and binds the meat together.
Belly-piece of pork
Its fat and meat form the body of the roll and add moisture and richness.
Forcemeat (in the method)
Spread over the pork, it fills the layers and adds moisture and flavour to the roll.

The step that matters

Braise the wrapped roll until tender. Long, gentle moist heat breaks down collagen in the calf's feet into gelatin, which is what lets the roll set firm when cold. Undercooking leaves the meat tough and the brawn loose.

Swap the mace

How well each one fits the dish's main ingredients (pork, clove, pepper, vinegar, mustard, sugar):

  1. Allspicefits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against pork, clove, pepper, vinegar, mustard, sugar. Candidates are from the same food group and used in at least 100 recipes.
