What each ingredient does

Bread crumbs
Thicken the sauce and give it body as they absorb the cream or milk.
Cream or milk
Provides the liquid base and richness that the bread crumbs soften into a smooth sauce.
Butter
Adds fat for a rich mouthfeel and a smooth, glossy finish.
Onion
Adds savoury aroma and flavour to the sauce base.

The step that matters

Boil the mixture together for five minutes. Boiling lets the bread crumbs fully absorb the liquid and swell, thickening the sauce. Stopping early can leave it thin or grainy, while boiling too hard may scorch the milk on the bottom of the pan.
