Why it works: Ginger and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

To Presbrve Cucumbers

Ingredients

Directions

Prepare the gherkins

  1. Soak fresh large gherkins in a saltwater solution for two days.

  2. Drain the gherkins and dry the gherkins.

  3. Place the gherkins in jars.

Make the pickling liquid

  1. Boil a mixture of sugar, vinegar, and water.

  2. Pour the boiled mixture over the gherkins and cover the jars.

  3. Place the jars in a warm area.

  4. Boil the liquid again and pour the boiled liquid over the gherkins for three consecutive days.

Make the syrup and finish

  1. After the third day, take a quart of the liquid and add spices to it.

  2. Boil the spiced liquid for 30 minutes and strain the mixture.

  3. Add plenty of sifted sugar to the mixture and clarify it with egg whites if needed.

  4. Reduce the mixture to a strong syrup.

  5. Ensure the gherkins are dry, pour the syrup over the gherkins, and cover the jars tightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh large gherkins
Form the main body of the pickle, becoming firm and crisp after brining.
Sugar
Provides sweetness and balances the sharpness of the vinegar.
Vinegar
Adds acidity that preserves the gherkins and gives the pickle its tang.
Sifted sugar
Sweetens and thickens the final syrup that coats the gherkins.
Spices (doves, mace, ginger, lemon peel)
Add aroma and warm flavour to the spiced syrup.

The step that matters

Reducing the spiced syrup. The liquid must be reduced to a strong, thick syrup. If it is too thin, it adds too much water to the jars and the pickles can spoil or lose their texture. Sugar concentration and boiling help preserve the gherkins.

Swap the mace

How well each one fits the dish's main ingredients (sugar, vinegar, ginger, lemon, egg):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against sugar, vinegar, ginger, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
