Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef marrow
Adds richness and a soft, moist body to the filling.
French bread crumbs
Absorbs liquid and gives the filling a light, binding structure.
Egg yolks
Bind the filling and help it set firm when heated.
Jordan almonds
Add body and a nutty texture to the filling.
Currants
Add pockets of sweetness and chewy texture.

The step that matters

Filling the casing. Filling three parts full leaves room for the mixture to expand as it heats. Overfilling can split the casing, while tying each end securely keeps the filling from leaking into the water.

Swap the mace
