Why it works: Nutmeg and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 11,917 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ingredients
Directions
Make the batter
In a bowl, mix the flour, salt, nutmeg, and cream or milk until well combined.
Whisk the eggs in a separate bowl, then add to the flour mixture and beat for 10 minutes until smooth and light.
Fry and serve
Heat a small amount of lard or butter in a frying pan over medium heat.
Pour in enough batter to just cover the bottom of the pan and fry until golden brown.
Serve hot with sifted sugar, pounded cinnamon, and Seville orange on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Forms the structure of the batter so the pancakes hold together when fried.
- Eggs
- Bind the batter and, when beaten, add lightness and structure to the pancakes.
- Cream or milk
- Adds moisture and richness, loosening the batter to a pourable consistency.
- Lard or butter
- Fat in the pan that conducts heat and helps the pancakes brown golden.
The step that matters
Pour in enough batter to just cover the bottom of the pan. A thin layer cooks quickly and evenly, so the pancake sets and browns before it tears or becomes dense. A thick pour cooks unevenly and is harder to flip.

Fit is the average pairing score against flour, nutmeg, cream, egg, butter, sugar, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
