Why it works: Ginger and nutmeg match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 3,324 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Roast Turkey
Ingredients
Directions
Select a young, fat turkey; the breastbone should yield to touch.
Singe, wash, and clean the turkey thoroughly, then soak in salt water for 15 minutes.
Soak the stale bread in water, then squeeze out the excess.
Heat goose fat in a pan, add the chopped onion, and cook until soft.
Add the squeezed bread to the pan to dry, then remove from heat.
In a bowl, combine the dried bread, salt, pepper, ginger, nutmeg, tomatoes, and eggs; mix well.
Rub the turkey inside and out with salt, pepper, and a little ginger.
Stuff the turkey with the dressing, sew it up, and refrigerate overnight.
