Quail Pie

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Clean the quails and season them with coarse sea salt and black pepper.

  2. Stuff the quails with bread crumbs or oyster dressing.

  3. Stew the quails, covered, for at least 10 minutes.

  4. Line a deep pie plate with thick puff pastry.

  5. Place the stewed quails in the pie plate.

  6. Sprinkle with minced parsley, chopped hard-boiled eggs, and butter rolled in flour.

  7. Squeeze a little lemon juice over the filling and add the gravy from the stewing.

  8. Cover with puff pastry and bake at 300°F (150°C) for at least 1 hour.
