Pineapple Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pineapple

  1. Pare and core the pineapple, then cut it into small slices.

  2. Sprinkle the pineapple slices abundantly with sugar and set aside in a covered dish to draw juice.

Bake the shells

  1. Bake two pie shells using rich pie dough on perforated pie plates at 400°F (200°C).

Make the filling

  1. Once the pineapple has released enough juice, stew it until soft enough to mash.

  2. Mash the stewed pineapple and set it aside to cool.

  3. Whip ½ pint of sweet cream until fluffy.

  4. Mix the whipped cream with the cooled pineapple and fill the baked pie shell.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pineapple
Provides the main fruit flavor and, once stewed and mashed, the body of the filling.
Sugar
Draws juice out of the pineapple and adds sweetness.
Rich pie dough
Forms the crisp, sturdy shell that holds the filling.
Sweet cream
Whipped, it adds lightness and a creamy texture to the filling.

The step that matters

Stewing the pineapple until soft enough to mash. The pineapple must be cooked until tender, but not so long that it breaks down into a thin liquid. Cooking it fully softens the fruit's fibers so it mashes smoothly, and cooling it before mixing keeps the whipped cream from deflating.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
