Ingredients

Directions

Make the base

  1. Add the powdered sugar and vanilla extract to the cream and mix well.

  2. Boil a vanilla bean in the cream.

  3. Let it cool completely before freezing.

Freeze

  1. Oil the machinery of the ice cream freezer before assembling.

  2. Fill the tub with ice and salt, allowing a few minutes for the cream to cool thoroughly.

  3. Turn the crank slowly until the freezing is complete, ensuring a moderate speed for smoothness.

  4. Do not remove the water during freezing.

  5. Keep the hole in the side of the tub open to let the water run out.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and richness, and the fat keeps the frozen texture smooth and creamy.
Powdered sugar
Adds sweetness and softens the frozen texture by lowering the freezing point.
Vanilla extract
Adds the main vanilla aroma and flavour.

The step that matters

Let the cream cool completely before freezing. A warm base freezes slowly, which lets large ice crystals form and leaves the ice cream grainy instead of smooth.
