Why it works: Cucumber and dill match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 530 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Salt Pickles

Ingredients

Directions

  1. Wash and wipe the cucumbers.

  2. Layer the cucumbers in a jar or wooden pail, sprinkling coarse sea salt over each layer.

  3. Add dill, whole peppers, grape leaves, and a few bay leaves if available.

  4. Cover with water up to the brim.

  5. Place a piece of bread in the jar to help sour the pickles.

  6. Cover with a plate and weigh it down with a clean, heavy stone to keep the cucumbers submerged in brine.

  7. Set the jar in a warm place, like the back of the kitchen stove, for the first three days.

  8. The pickles will be ready to use in a week.
