Cook the sauerkraut

  1. Return the meat to the pot, add soup stock and sauerkraut, and boil for about 1 hour.

  2. Tie caraway seeds in a bag and add to the pot while boiling.

  3. Thicken the mixture with grated potatoes and add brown sugar just before serving.

What each ingredient does

Brisket of beef
Provides the main meat, which becomes tender during the long simmer.
Sauerkraut
Supplies the sour flavor that defines the dish.
Raw potatoes
Grated potato releases starch that thickens the cooking liquid.
Brown sugar
Adds sweetness that balances the sourness of the sauerkraut.
Caraway seeds
Contribute an aromatic, earthy flavor to the broth.

The step that matters

Thicken with grated potatoes. Raw grated potato releases starch as it cooks, which thickens the liquid. Adding too much or too little changes the body of the sauce, so the amount should be judged by the texture as it simmers.

Swap the caraway
