Maple Creams

Ingredients

Directions

Make the maple candy

  1. Boil maple sugar with water until it becomes brittle in cold water.

  2. When it starts to harden, remove from heat and stir rapidly until waxen.

Shape and cool

  1. Form into balls the size of marbles, buttering your hands to prevent sticking.

  2. Place half a walnut kernel on each side of the balls.

  3. Lay them on a greased platter to cool.

What each ingredient does

Maple sugar
Provides the sweet flavour and, when boiled, forms the candy mass that sets as it cools.
Water
Dissolves the maple sugar so it can be boiled evenly before concentrating into candy.
Walnut kernels
Add a crunchy texture and nutty flavour contrasting with the soft, waxen candy.

The step that matters

Stirring after removing from heat. Stirring rapidly as the mixture cools and starts to harden encourages fine sugar crystals, giving a smooth, creamy texture rather than a coarse, grainy one. Stirring too early or too slowly can make the candy grainy or hard to shape.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, butter):

  1. Almondfits better
  2. Pecansfits better
  3. Filbertfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
