Almond Caramels

Ingredients

Directions

Prepare the caramel base

  1. Boil 1 cup of sugar without water until melted.

  2. Remove from heat and add 1 cup of unblanched almonds.

  3. Prepare waxed or buttered paper.

Shape and color

  1. Mix chopped nuts with French cream and form into balls or shapes.

  2. Color with fruit coloring and flavor as desired.

  3. Roll in melted chocolate or coffee cream.

Make the coffee cream

  1. For coffee cream, steep 1 heaping tablespoon of powdered coffee in ⅓ cup of boiling water for 5 minutes.

  2. Strain and use this coffee instead of water in the French cream recipe, adding 1 cup of sugar.

Make and cream the caramel

  1. For the caramel, boil ½ cup of hot water with 2 cups of white sugar for 5 minutes without stirring.

  2. Check consistency by dropping from a spoon; it should thread.

  3. Pour into a bowl and stir rapidly with a silver spoon.

  4. If it doesn't cream, boil for another minute or two.

  5. Flavor with 1 teaspoon of vanilla or desired flavoring when cooling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Melts and caramelizes to form the sweet, chewy candy base.
Unblanched almonds
Add crunchy texture and nutty flavor to the caramel.
Powdered coffee
Provides the coffee flavor in the cream filling.

The step that matters

Checking the caramel consistency before stirring. Sugar syrup must reach the right concentration before creaming. Dropping it from a spoon to see if it threads shows whether it is ready. Stirring too early or too late changes how the sugar crystallizes, so the caramel can turn grainy or stay too soft.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, almond, chocolate, coffee, cream):

  1. Hazelnutfits better
  2. Pistachiofits better
  3. Chestnutfits about as well
  4. Nutsthe original

Fit is the average pairing score against sugar, almond, chocolate, coffee, cream. Candidates are from the same food group and used in at least 100 recipes.
